Keto Peppermint Mousse Shooters

Ingredients:

  • 1 cup heavy whipping cream
  • 4 oz cream cheese, softened
  • 1/4 cup powdered erythritol or another keto-friendly sweetener
  • 1/2 tsp peppermint extract
  • 1/2 tsp vanilla extract
  • 1/4 cup sugar-free dark chocolate chips (optional, for topping)
  • 1/2 tbsp unsweetened cocoa powder (optional, for garnish)
  • A few drops of natural green food coloring (optional)

Instructions:

  1. Prepare the Whipped Cream: In a medium bowl, whip the heavy cream with an electric mixer until stiff peaks form. Set aside.
  2. Mix the Cream Cheese and Sweetener: In another bowl, beat the softened cream cheese until smooth. Add powdered erythritol, peppermint extract, and vanilla extract. Beat until everything is well combined and smooth.
  3. Fold in the Whipped Cream: Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Make sure not to overmix to keep the mousse light and fluffy.
  4. Add Food Coloring (Optional): If you want a light green color for the mousse, add a few drops of natural green food coloring and gently fold until evenly colored.
  5. Fill the Shooters: Spoon or pipe the peppermint mousse into small shooter glasses or cups.
  6. Chill: Refrigerate for at least 1 hour to allow the mousse to set and flavors to meld together.
  7. Garnish and Serve: Before serving, top each mousse shooter with a few sugar-free dark chocolate chips and a light dusting of unsweetened cocoa powder for a festive touch.

Tips:

  • For an extra touch, you can add a small dollop of whipped cream on top before garnishing.
  • If you prefer a stronger peppermint flavor, adjust the peppermint extract to taste.
