Keto Onion Rings
Ingredients:
- 1 large onion
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup unsweetened coconut flakes (optional, for extra crunch)
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking oil (e.g., avocado oil) for frying
Instructions:
- Prepare the Onion:
- Peel the onion and slice it into 1/4 to 1/2-inch rings. Separate the rings and set them aside.
- Prepare the Breading:
- In a shallow dish, combine the almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well.
- In another shallow dish, whisk the eggs until well beaten.
- Coat the Onion Rings:
- Dip each onion ring into the egg mixture, making sure it is fully coated.
- Dredge the egg-coated onion ring in the almond flour mixture, pressing lightly to adhere. If using coconut flakes, you can coat the rings with them as well for extra crunch.
- Fry the Onion Rings:
- Heat a generous amount of oil in a skillet over medium-high heat. You want enough oil to cover the bottom of the skillet and allow the rings to float slightly.
- Fry the onion rings in batches, being careful not to overcrowd the pan. Cook each side for about 2-3 minutes, or until golden brown and crispy.
- Remove the rings and place them on a paper towel-lined plate to drain any excess oil.
- Serve:
- Enjoy the onion rings warm. They pair well with keto-friendly dipping sauces like ranch or a low-carb ketchup.
