Keto Onion Rings

Ingredients:

  • 1 large onion
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 cup unsweetened coconut flakes (optional, for extra crunch)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking oil (e.g., avocado oil) for frying

Instructions:

  1. Prepare the Onion:
    • Peel the onion and slice it into 1/4 to 1/2-inch rings. Separate the rings and set them aside.
  2. Prepare the Breading:
    • In a shallow dish, combine the almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well.
    • In another shallow dish, whisk the eggs until well beaten.
  3. Coat the Onion Rings:
    • Dip each onion ring into the egg mixture, making sure it is fully coated.
    • Dredge the egg-coated onion ring in the almond flour mixture, pressing lightly to adhere. If using coconut flakes, you can coat the rings with them as well for extra crunch.
  4. Fry the Onion Rings:
    • Heat a generous amount of oil in a skillet over medium-high heat. You want enough oil to cover the bottom of the skillet and allow the rings to float slightly.
    • Fry the onion rings in batches, being careful not to overcrowd the pan. Cook each side for about 2-3 minutes, or until golden brown and crispy.
    • Remove the rings and place them on a paper towel-lined plate to drain any excess oil.
  5. Serve:
    • Enjoy the onion rings warm. They pair well with keto-friendly dipping sauces like ranch or a low-carb ketchup.
