keto Loaded Steak Quesadillas Recipe

Ingredients:

  • 1 cup cooked steak, thinly sliced
  • 2 low-carb tortillas (check carb content)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup sautéed bell peppers and onions
  • 2 tbsp sour cream (for topping)
  • 1 tbsp olive oil or butter
  • 2 tbsp guacamole (for serving, optional)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions:

  1. Prepare the Steak:
    • Slice your cooked steak thinly if not already done. Season with garlic powder, salt, and pepper if desired.
  2. Heat the Tortilla:
    • Heat a skillet over medium heat and add a bit of olive oil or butter. Place one tortilla in the pan.
  3. Add the Fillings:
    • Sprinkle half of the shredded cheese evenly over the tortilla.
    • Layer sliced steak, sautéed bell peppers, and onions on top of the cheese.
    • Sprinkle the remaining cheese on top and cover with the second tortilla.
  4. Cook the Quesadilla:
    • Press gently with a spatula to keep everything together. Cook for 2-3 minutes or until the bottom tortilla is golden brown and crispy.
    • Carefully flip the quesadilla and cook the other side until golden and the cheese is melted.
  5. Serve:
    • Remove from the skillet and let it cool for a minute. Slice into wedges.
    • Serve with sour cream, guacamole, or a side of salsa for dipping.

Tips:

  • For extra flavor, add jalapeños or hot sauce inside the quesadilla.
  • You can use chicken, shrimp, or ground beef instead of steak.
  • Use keto-friendly tortillas or make cheese shell quesadillas if you prefer ultra-low-carb.
