Keto Hostess Cupcakes
Ingredients
For the Cupcakes:
- 1 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- 1 cup granulated erythritol or another keto-friendly sweetener
- 1 tsp baking powder
- ¼ tsp salt
- 3 large eggs
- ½ cup unsalted butter, melted
- 1 tsp vanilla extract
- ¼ cup unsweetened almond milk (or any other keto-friendly milk)
For the Cream Filling:
- ½ cup heavy cream
- 2 tbsp powdered erythritol or another keto-friendly sweetener
- 1 tsp vanilla extract
For the Chocolate Ganache:
- ¼ cup unsweetened cocoa powder
- ¼ cup heavy cream
- 2 tbsp butter
- 2 tbsp granulated erythritol or another keto-friendly sweetener
- 1 tsp vanilla extract

Instructions
1. Preheat your oven:
- Preheat to 350°F (175°C) and line a cupcake tin with paper liners.
2. Make the Cupcake Batter:
- In a large bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
- In another bowl, beat the eggs, then add melted butter, vanilla extract, and almond milk. Mix well.
- Combine the wet and dry ingredients until smooth.
3. Bake the Cupcakes:
- Divide the batter evenly among the cupcake liners.
- Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely on a wire rack.
4. Prepare the Cream Filling:
- Whip the heavy cream until soft peaks form.
- Gently fold in the powdered erythritol and vanilla extract until well combined.
- Transfer the cream filling to a piping bag fitted with a round tip.
5. Fill the Cupcakes:
- Once the cupcakes are completely cool, use a small knife or cupcake corer to remove a small portion of the center of each cupcake.
- Pipe the cream filling into the center of each cupcake.
6. Make the Ganache:
- In a small saucepan, combine the cocoa powder, heavy cream, butter, and erythritol.
- Heat over low heat, stirring constantly until the mixture is smooth and well combined.
- Remove from heat and stir in vanilla extract. Let it cool slightly.
7. Frost the Cupcakes:
- Spoon or drizzle the ganache over each filled cupcake, allowing it to drip down the sides if you like.
8. Chill (Optional):
- For best results, refrigerate the cupcakes for about 30 minutes to let the ganache set.
