Keto Hostess Cupcakes

Ingredients

For the Cupcakes:

  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • 1 cup granulated erythritol or another keto-friendly sweetener
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • ¼ cup unsweetened almond milk (or any other keto-friendly milk)

For the Cream Filling:

  • ½ cup heavy cream
  • 2 tbsp powdered erythritol or another keto-friendly sweetener
  • 1 tsp vanilla extract

For the Chocolate Ganache:

  • ¼ cup unsweetened cocoa powder
  • ¼ cup heavy cream
  • 2 tbsp butter
  • 2 tbsp granulated erythritol or another keto-friendly sweetener
  • 1 tsp vanilla extract

Instructions

1. Preheat your oven:

  • Preheat to 350°F (175°C) and line a cupcake tin with paper liners.

2. Make the Cupcake Batter:

  • In a large bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
  • In another bowl, beat the eggs, then add melted butter, vanilla extract, and almond milk. Mix well.
  • Combine the wet and dry ingredients until smooth.

3. Bake the Cupcakes:

  • Divide the batter evenly among the cupcake liners.
  • Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool completely on a wire rack.

4. Prepare the Cream Filling:

  • Whip the heavy cream until soft peaks form.
  • Gently fold in the powdered erythritol and vanilla extract until well combined.
  • Transfer the cream filling to a piping bag fitted with a round tip.

5. Fill the Cupcakes:

  • Once the cupcakes are completely cool, use a small knife or cupcake corer to remove a small portion of the center of each cupcake.
  • Pipe the cream filling into the center of each cupcake.

6. Make the Ganache:

  • In a small saucepan, combine the cocoa powder, heavy cream, butter, and erythritol.
  • Heat over low heat, stirring constantly until the mixture is smooth and well combined.
  • Remove from heat and stir in vanilla extract. Let it cool slightly.

7. Frost the Cupcakes:

  • Spoon or drizzle the ganache over each filled cupcake, allowing it to drip down the sides if you like.

8. Chill (Optional):

  • For best results, refrigerate the cupcakes for about 30 minutes to let the ganache set.
