Ingredients:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup unsalted butter (softened)
- ¼ cup granulated erythritol (or another keto-friendly sweetener)
- ¼ cup brown erythritol or keto brown sugar substitute
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup sugar-free chocolate chips (or chopped keto chocolate)

Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix Dry Ingredients: In a medium bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt.
- Cream Butter and Sweeteners: In a large bowl, use an electric mixer to beat the softened butter with the granulated erythritol and brown erythritol until light and fluffy.
- Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
- Combine Mixtures: Gradually add the dry ingredients to the butter mixture, mixing until just combined. Stir in the sugar-free chocolate chips.
- Shape Cookies: Scoop dough in rounded tablespoons and place on the prepared baking sheet. Flatten them slightly with the back of a spoon or your fingers, as they won’t spread much during baking.
- Bake: Bake for 10-12 minutes, or until the edges are golden brown. The centers might look a bit soft, but they will firm up as they cool.
- Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
