Keto Chocolate Chip Bread

Ingredients:

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup granulated erythritol or another keto-friendly sweetener
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup melted coconut oil or butter
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together the almond flour, cocoa powder, sweetener, baking powder, and salt.
  3. Combine Wet Ingredients: In another bowl, mix the melted coconut oil (or butter), eggs, and vanilla extract until well combined.
  4. Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the sugar-free chocolate chips.
  5. Pour into Pan: Pour the batter into the prepared loaf pan and spread it out evenly.
  6. Bake: Bake for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
