Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup almond flour
- 1 cup grated Parmesan cheese
- 2 large eggs
- 2 tablespoons heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika (optional, for extra flavor)
- Salt and pepper to taste
- 1/4 cup coconut oil or avocado oil (for frying)

Instructions:
- Prepare the Chicken:
- Place the chicken breasts between two sheets of plastic wrap or parchment paper.
- Gently pound the chicken with a meat mallet or rolling pin until they are about 1/4 inch thick. This helps them cook evenly and become tender.
- Prepare the Breading:
- In a shallow bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika (if using), salt, and pepper.
- In another shallow bowl, whisk together the eggs and heavy cream until well combined.
- Coat the Chicken:
- Dip each chicken breast into the egg mixture, allowing any excess to drip off.
- Coat the chicken thoroughly with the almond flour mixture, pressing gently to ensure it sticks well.
- Fry the Chicken:
- Heat the oil in a large skillet over medium heat.
- Once the oil is hot, add the breaded chicken breasts. Cook for about 3-4 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- Serve:
- Remove the chicken from the skillet and place it on a paper towel-lined plate to drain any excess oil.
