Keto Chicken Nuggets Air Fryer Recipe

Ingredients:
- 1 lb chicken breasts (cut into nugget-sized pieces)
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 large eggs
- 2 tbsp heavy cream
- Cooking spray (avocado oil or olive oil)
Instructions:
- Prepare the Chicken:
- Cut the chicken breasts into nugget-sized pieces, about 1-2 inches each.
- Set Up Breading Stations:
- In a shallow bowl, mix the almond flour, grated Parmesan cheese, paprika, garlic powder, onion powder, salt, and black pepper.
- In another shallow bowl, whisk together the eggs and heavy cream.
- Bread the Chicken Nuggets:
- Dip each piece of chicken into the egg mixture, allowing any excess to drip off.
- Then coat the chicken piece in the almond flour mixture, pressing gently to ensure the breading sticks.
- Repeat until all chicken pieces are coated.
- Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Cook the Chicken Nuggets:
- Lightly spray the air fryer basket with cooking spray.
- Arrange the breaded chicken nuggets in a single layer in the basket. Do not overcrowd; cook in batches if necessary.
- Lightly spray the tops of the nuggets with cooking spray.
- Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until the nuggets are golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- Serve:
- Remove the chicken nuggets from the air fryer and let them cool slightly before serving.
- Enjoy with your favorite keto-friendly dipping sauce, such as sugar-free ketchup, mustard, or ranch dressing.
