Keto Chicken Cordon Bleu Casserole

Ingredients:

  • 4 boneless, skinless chicken breasts (cut into cubes)
  • 8 oz ham (diced)
  • 1 1/2 cups shredded Swiss cheese
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp butter (for greasing the casserole dish)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat Oven: Set your oven to 375°F (190°C). Grease a 9×13-inch casserole dish with butter to prevent sticking.
  2. Prepare Chicken: Season the chicken cubes with salt, pepper, garlic powder, and onion powder. In a skillet over medium heat, cook the chicken until browned and cooked through (about 6–8 minutes). Remove from heat and set aside.
  3. Make the Sauce: In a separate pan, combine the heavy cream, chicken broth, Dijon mustard, and a pinch of salt and pepper. Stir over medium heat until it starts to simmer, then add the Swiss cheese. Continue stirring until the cheese melts and the sauce thickens.
  4. Assemble the Casserole: In the prepared casserole dish, layer the cooked chicken, diced ham, and pour the cheesy sauce over the top. Give it a little shake to spread everything evenly.
  5. Bake: Place the casserole in the oven and bake for 20-25 minutes, or until it’s bubbling and golden on top.
  6. Garnish & Serve: Once out of the oven, garnish with fresh parsley if you like, and serve hot!
