Keto Chicken Cordon Bleu Casserole
Ingredients:
- 4 boneless, skinless chicken breasts (cut into cubes)
- 8 oz ham (diced)
- 1 1/2 cups shredded Swiss cheese
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup Dijon mustard
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 2 tbsp butter (for greasing the casserole dish)
- Fresh parsley (optional, for garnish)
Instructions:
- Preheat Oven: Set your oven to 375°F (190°C). Grease a 9×13-inch casserole dish with butter to prevent sticking.
- Prepare Chicken: Season the chicken cubes with salt, pepper, garlic powder, and onion powder. In a skillet over medium heat, cook the chicken until browned and cooked through (about 6–8 minutes). Remove from heat and set aside.
- Make the Sauce: In a separate pan, combine the heavy cream, chicken broth, Dijon mustard, and a pinch of salt and pepper. Stir over medium heat until it starts to simmer, then add the Swiss cheese. Continue stirring until the cheese melts and the sauce thickens.
- Assemble the Casserole: In the prepared casserole dish, layer the cooked chicken, diced ham, and pour the cheesy sauce over the top. Give it a little shake to spread everything evenly.
- Bake: Place the casserole in the oven and bake for 20-25 minutes, or until it’s bubbling and golden on top.
- Garnish & Serve: Once out of the oven, garnish with fresh parsley if you like, and serve hot!
