Keto Cream Cheese Pecan Cookies

Ingredients:

  • 2 cups almond flour
  • 4 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1/4 cup erythritol or your preferred sweetener
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1/4 tsp baking soda
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the softened cream cheese, butter, and sweetener until smooth and creamy.
  3. Add the vanilla extract and baking soda, then stir in the almond flour until well combined.
  4. Gently fold in the chopped pecans.
  5. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  6. Flatten each cookie slightly with the back of a spoon.
  7. Bake for 10-12 minutes, or until golden brown around the edges.
  8. Let them cool completely before enjoying!
