Keto Cream Cheese Pecan Cookies

Ingredients:
- 2 cups almond flour
- 4 oz cream cheese, softened
- 1/4 cup butter, softened
- 1/4 cup erythritol or your preferred sweetener
- 1/2 tsp vanilla extract
- 1/2 cup chopped pecans
- 1/4 tsp baking soda
- Pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the softened cream cheese, butter, and sweetener until smooth and creamy.
- Add the vanilla extract and baking soda, then stir in the almond flour until well combined.
- Gently fold in the chopped pecans.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
- Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until golden brown around the edges.
- Let them cool completely before enjoying!
