Keto Chicken Cordon Bleu
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 slices Swiss cheese (or your preferred cheese like Gruyère or mozzarella)
- 4 slices deli ham (make sure it’s nitrate-free and keto-friendly)
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 2 tbsp heavy cream
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme (optional)
- Salt and pepper to taste
- 2 tbsp butter (for frying)
- Olive oil or avocado oil (for frying)
Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Prepare the chicken: Use a sharp knife to carefully slice the chicken breasts horizontally to create a pocket (be careful not to slice all the way through). You can also pound the chicken to make it thinner if preferred.
- Assemble the Cordon Bleu:
- Lay a slice of ham inside each chicken breast pocket, then place a slice of cheese on top of the ham.
- Close the pocket and secure with toothpicks if needed (to keep everything in place while cooking).
- Prepare the breading:
- In a shallow bowl, whisk together the eggs and heavy cream until smooth.
- In another shallow bowl, combine the almond flour, Parmesan cheese, garlic powder, onion powder, dried thyme (optional), salt, and pepper.
- Dip each stuffed chicken breast into the egg mixture, ensuring it’s coated well, then dredge it in the almond flour mixture, pressing gently to coat evenly.
- Fry the chicken:
- In a large skillet, heat 1 tablespoon of butter and a drizzle of olive oil over medium heat. Once the pan is hot, carefully place the breaded chicken breasts in the skillet.
- Cook for 3-4 minutes on each side until golden brown. The goal here is to get a crispy crust while the chicken cooks, but don’t worry if it’s not fully cooked through yet.
- Bake the chicken: Transfer the browned chicken breasts to a baking sheet and bake in the preheated oven for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is melted inside.
- Serve: Once done, remove the toothpicks and let the chicken rest for a few minutes before serving. You can garnish with fresh parsley or drizzle with a little extra melted butter if desired.
Tips:
- If you want to make it extra crispy, you can use a mixture of almond flour and crushed pork rinds for the breading.
- Serve with a side of sautéed veggies or a fresh salad for a complete keto meal.
- If you’re not a fan of Swiss cheese, you can try cheddar, mozzarella, or provolone instead.
