Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C).
Cook the Ground Beef:
Heat olive oil or butter in a large skillet over medium heat.
Add the diced onion and minced garlic, sauté until softened (about 3-4 minutes).
Add the ground beef to the skillet and cook until browned. Season with salt, pepper, paprika, cumin, and chili powder (if using).
Drain excess fat if necessary and set aside.
Prepare the Cauliflower Rice:
If using fresh cauliflower, pulse florets in a food processor until they resemble rice-sized grains. If using frozen cauliflower rice, thaw it and drain any excess moisture.
In the same skillet, add the cauliflower rice and cook for about 5 minutes until tender.
Make the Creamy Sauce:
In a saucepan, combine the cream cheese, heavy cream, sour cream, and beef broth. Cook over medium heat, stirring frequently until the cream cheese is fully melted and the sauce is smooth.
Add salt and pepper to taste.
Assemble the Casserole:
In a greased 9×13 inch baking dish, layer the cooked cauliflower rice, ground beef mixture, and creamy sauce. Stir gently to combine.
Top the casserole with shredded cheddar cheese.
Bake:
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Once baked, remove the casserole from the oven. Let it cool slightly.
Garnish with chopped green onions or parsley if desired.
