Keto Air Fryer Stuffed Portobello Mushrooms


Ingredients:-
4 large Portobello mushrooms
1/2 pound (about 225g) ground sausage (choose a low-carb option)
1/2 cup finely chopped spinach
1/4 cup grated Parmesan cheese
1/4 cup cream cheese
1/4 cup shredded mozzarella cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Olive oil for brushing
Instructions:-
Preheat your air fryer to 375°F (190°C).
Clean the Portobello mushrooms and remove the stems.
In a skillet, cook the ground sausage until it’s browned and cooked through. Drain excess grease.
In a mixing bowl, combine the cooked sausage, chopped spinach, grated Parmesan cheese, cream cheese, shredded mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.
Brush the outside of the Portobello mushrooms with a little olive oil.
Fill each mushroom cap with the sausage and cheese mixture.
Place the stuffed mushrooms in the preheated air fryer basket. You may need to do this in batches depending on the size of your air fryer.
Air fry the mushrooms for about 10-12 minutes or until the mushrooms are tender and the filling is golden brown and bubbly.
