I’m a little embarrassed by how much I love this dish

Ingredients:

1 lb chicken breast, cubed

1 cup orzo pasta

2 cups chicken broth

1 cup heavy cream

1 cup Parmesan cheese, grated

2 cloves garlic, minced

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley for garnish.

follow these steps:

1. Prepare the orzo:

Melt butter in a skillet over medium heat.

Add orzo and toast for 2-3 minutes, stirring constantly.

Add chicken broth, ½ cup at a time, and simmer, stirring frequently, until the broth is absorbed (about 8 minutes).

Stir in cream and cheese until the cheese melts into a creamy sauce.

2. Prepare the Chicken:

Trim excess skin and fat from chicken thighs and season with salt.

Brown the chicken thighs in a pan.

3. Combine and Bake:

In the same pan, brown the orzo pasta, then add onions and garlic.

Stir in stock, tomatoes, salt, and pepper.

Add back the chicken, and pour the stock mixture over the orzo.

Cover and cook.

4. Add Cheese and Bake:

Layer mozzarella cheese, fresh basil, and provolone cheese on each chicken breast.

Sprinkle remaining Parmesan over the top and drizzle with olive oil.

Bake until the cheese is browned and bubbly and the chicken is cooked through (15-20 minutes).
