Homemade Turtle Candy With Pecans and Caramel

Ingredients:
- 1 cup pecan halves (or pieces)
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/2 cup unsalted butter
- 1 cup brown sugar (packed)
- 1/4 teaspoon vanilla extract
- Pinch of salt
Instructions:
1. Toast the Pecans:
- Preheat your oven to 350°F (175°C).
- Spread the pecans in a single layer on a baking sheet.
- Toast them in the oven for about 8–10 minutes, or until fragrant, stirring halfway through. Keep an eye on them so they don’t burn.
- Remove from the oven and set aside.
2. Make the Caramel:
- In a medium saucepan over medium heat, melt the butter.
- Stir in the brown sugar and bring it to a simmer. Let it cook for 2–3 minutes while stirring constantly.
- Slowly add the heavy cream, stirring continuously, and allow the mixture to simmer for another 3–4 minutes until it thickens. You want the caramel to be smooth and creamy.
- Remove the pan from the heat and stir in the vanilla extract and a pinch of salt.
3. Assemble the Turtle Candies:
- Line a baking sheet with parchment paper or a silicone baking mat.
- Arrange the toasted pecans in clusters, about 3–4 pecans per cluster, on the prepared baking sheet.
- Pour the warm caramel over each pecan cluster, making sure the caramel coats the pecans well.
4. Add the Chocolate:
- Melt the chocolate chips in the microwave or over a double boiler until smooth.
- Spoon or drizzle the melted chocolate over each pecan cluster with caramel.
5. Let it Set:
- Allow the turtle candies to cool and set at room temperature for at least 30 minutes, or place them in the refrigerator to speed up the process.
6. Serve and Enjoy:
- Once set, your homemade turtle candies are ready to enjoy! Store them in an airtight container.
