Home Made Keto Air Fryer Scones

🧾 Ingredients:

  • 1 ½ cups almond flour
  • 2 tbsp coconut flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp erythritol or preferred keto sweetener
  • 1 large egg
  • ¼ cup melted butter
  • 1 tsp vanilla extract
  • 2–3 tbsp heavy cream (as needed for moisture)
  • Optional: Sugar-free chocolate chips, blueberries, or lemon zest

👩‍🍳 Instructions:

  1. Preheat Air Fryer: Set your air fryer to 320°F (160°C).
  2. Mix Dry Ingredients: In a bowl, whisk together almond flour, coconut flour, baking powder, salt, and sweetener.
  3. Add Wet Ingredients: Add the egg, melted butter, vanilla, and 2 tbsp of heavy cream. Mix until a dough forms. If it’s too dry, add a little more cream.
  4. Fold In Extras: If using chocolate chips, blueberries, or other add-ins, gently fold them in.
  5. Shape Scones: Form dough into a circle about 1 inch thick. Cut into 6 wedges or use a cookie cutter for round scones.
  6. Air Fry: Place parchment paper in the air fryer basket, then add the scones. Don’t overcrowd — cook in batches if needed.
    Air fry for 12–15 minutes or until golden and firm on top.
  7. Cool & Serve: Let them cool slightly before serving. Great with sugar-free jam or clotted cream!
