- 1Β½ cups cooked chickpeas (crispy roasted)
- 1 cup cooked chicken breast, diced
- 1 cup cottage cheese (for topping)
- Β½ cup feta cheese or shredded cheddar
- 2 tbsp pumpkin seeds or sunflower seeds
Optional sauce (high-protein):
- Β½ cup Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Pinch of salt

- Preheat oven:
220Β°C (425Β°F) - Season potatoes:
Toss sweet potato cubes with olive oil, paprika, garlic powder, cumin, salt, and pepper. - Roast:
Spread on a baking tray in a single layer.
Roast for 25β30 minutes, flipping halfway, until golden and crispy. - Add protein:
- If using chickpeas: roast them alongside (same seasoning works great)
- If using chicken: add cooked diced chicken after roasting or warm separately
- Make sauce (optional):
Mix Greek yogurt, lemon juice, garlic, and salt. - Assemble:
Plate roasted sweet potatoes, add protein, then drizzle yogurt sauce and sprinkle cheese or seeds.
