Base:

  • 3 medium sweet potatoes, peeled & cubed
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ยฝ tsp cumin
  • Salt & black pepper to taste

Protein boost options (pick one or mix):

  • 1ยฝ cups cooked chickpeas (crispy roasted)
  • 1 cup cooked chicken breast, diced
  • 1 cup cottage cheese (for topping)
  • ยฝ cup feta cheese or shredded cheddar
  • 2 tbsp pumpkin seeds or sunflower seeds

Optional sauce (high-protein):

  • ยฝ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • Pinch of salt

  1. Preheat oven:
    220ยฐC (425ยฐF)
  2. Season potatoes:
    Toss sweet potato cubes with olive oil, paprika, garlic powder, cumin, salt, and pepper.
  3. Roast:
    Spread on a baking tray in a single layer.
    Roast for 25โ€“30 minutes, flipping halfway, until golden and crispy.
  4. Add protein:
    • If using chickpeas: roast them alongside (same seasoning works great)
    • If using chicken: add cooked diced chicken after roasting or warm separately
  5. Make sauce (optional):
    Mix Greek yogurt, lemon juice, garlic, and salt.
  6. Assemble:
    Plate roasted sweet potatoes, add protein, then drizzle yogurt sauce and sprinkle cheese or seeds.
