High-Protein Mixed Berry Yogurt Parfait

Servings: 1 large glass or jar (or 2 smaller parfaits)

Ingredients

  • 1 cup (225g) plain 0% or 2% Greek yogurt (or cottage cheese blended smooth)
  • 1 scoop (25g–30g) vanilla protein powder (whey, casein, or plant-based)
  • 1 tbsp honey, maple syrup, or liquid stevia (optional, for added sweetness)
  • 1 tsp vanilla extract
  • ½ cup fresh strawberries, sliced
  • ½ cup fresh blackberries
  • ¼ cup fresh blueberries or raspberries
  • 2 tbsp mixed berry chia jam or berry compote (optional, for swirl layers)
  • Light whipped cream & fresh berries (for topping)

Instructions

  1. Prepare the High-Protein BaseIn a medium bowl, combine the Greek yogurt, vanilla protein powder, sweetener of choice, and vanilla extract. Whisk thoroughly until smooth and creamy with no powder clumps remaining.
  2. Prep the BerriesWash and dry the berries. Slice the strawberries into bite-sized pieces.
  3. Layer the ParfaitIn a tall clear glass or glass jar, assemble the layers:
    • Bottom layer: A generous spoonful of the high-protein vanilla yogurt mix.
    • Middle layer: A spoonful of berry jam/compote followed by a layer of fresh strawberries, blackberries, and blueberries.
    • Repeat: Add another layer of protein yogurt, followed by more fresh berries.
  4. Top and ServeTop with a dollop of whipped cream and finish with fresh whole strawberries and blackberries. Serve immediately, or cover and chill in the fridge for up to 2 days for quick meal-prep breakfasts!
