Ingredients

For the High-Protein Biscuits:

1 cup Self-Rising Flour (or 1 cup All-Purpose Flour + 1 ½ tsp baking powder + ¼ tsp salt)

1 cup Low-Fat Cottage Cheese or Plain Non-Fat Greek Yogurt

1 tbsp Light Butter, melted (for brushing)

½ tsp Garlic Powder

Pinch of Salt

For the Filling:

6–8 oz Thinly Sliced Lean Deli Ham

6 slices Swiss Cheese or Reduced-Fat Swiss Cheese

Instructions

Preheat & Prepare:

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

Make the Dough:

In a large mixing bowl, combine the self-rising flour, cottage cheese (or Greek yogurt), garlic powder, and a pinch of salt. Mix with a spatula or spoon until a dough forms. If using cottage cheese, you can blend it first for a smooth texture or leave it as-is for traditional biscuit pockets.

Shape & Bake Biscuits:

Turn the dough out onto a lightly floured surface. Gently press or roll it out to about ¾-inch thickness. Use a biscuit cutter or glass to cut into 6 round biscuits. Place them on the prepared baking sheet and bake for 12–15 minutes until lightly golden brown.

Assemble the Sliders:

Slice the warm biscuits in half horizontally. Layer the bottom half of each biscuit with thinly sliced ham and a slice of Swiss cheese, then top with the biscuit lid.

Melt the Cheese & Serve:

Return the assembled biscuit sandwiches to a foil pan or baking sheet and place them back in the oven for 3–5 minutes until the Swiss cheese is warm, gooey, and completely melted. Serve immediately!
