Ingredients
- 4 thick-cut Bone-In Pork Chops (about 1 inch thick, ~1.5 lbs total)
- 3 tbsp Grass-Fed Butter (or Light Butter)
- 4 cloves Garlic, minced
- 1 tbsp Olive Oil or Avocado Oil
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Smoked Paprika
- ½ tsp Dried Thyme or Rosemary
- 1 tbsp Fresh Parsley or Rosemary sprigs, finely chopped
- Salt & Freshly Cracked Black Pepper to taste
Instructions
- Prep & Season:Pat the pork chops completely dry with paper towels (this is key for a golden sear). In a small bowl, mix the garlic powder, onion powder, smoked paprika, dried thyme, salt, and pepper. Season both sides of the pork chops generously with the spice rub.
- Sear the Chops:Heat olive oil in a large heavy skillet (preferably cast iron) over medium-high heat until shimmeringly hot. Place the pork chops in the pan and sear for 4 to 5 minutes without moving them, until a deep golden-brown crust forms.
- Flip & Baste:Flip the pork chops over. Add the butter, minced garlic, and fresh rosemary sprigs to the pan. As the butter melts and foams, tilt the pan slightly and use a spoon to continuously baste the pork chops with the garlic butter.
- Cook to Perfection:Cook for another 4 to 6 minutes (basting continuously) until an internal thermometer inserted into the thickest part reads 145°F (63°C).
- Rest & Serve:Transfer the pork chops to a plate, pour the remaining garlic butter from the pan over top, and let them rest for 5 minutes before serving. Garnish with fresh chopped parsley.
