High-Protein French Toast Casserole

โœ… Ingredients (Serves 4โ€“6)

  • 6 cups whole grain or brioche bread (cubed, slightly stale works best)
  • 6 large eggs
  • 1 cup Greek yogurt (plain, high-protein)
  • 1 cup milk (any kind)
  • 1โ€“2 tbsp honey or maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Optional: berries or banana slices

๐Ÿ”ช Instructions

  1. Preheat oven
    • Set to 180ยฐC (350ยฐF)
    • Lightly grease a baking dish
  2. Prepare bread base
    • Add cubed bread to dish evenly
    • Sprinkle in fruit if using
  3. Make protein custard
    • Whisk eggs + Greek yogurt + milk
    • Add honey, cinnamon, vanilla
      โ†’ Smooth and slightly thick mixture
  4. Combine
    • Pour mixture over bread
    • Press lightly so all bread soaks it up
    • Let sit 10โ€“15 minutes (important)
  5. Bake
    • Bake 35โ€“40 minutes until set and golden
  6. Cool slightly & serve
    • Let rest 5โ€“10 minutes before slicing
