Dry Ingredients
- 1 cup vanilla or unflavored whey or plant protein powder
- 1 cup white whole wheat flour (or oat flour)
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
Wet Ingredients
- 1 cup plain Greek yogurt (0–2%)
- 2 large eggs
- ⅓ cup honey or maple syrup
- 2 tbsp melted coconut oil or light butter
- Zest of 2 lemons
- 3 tbsp fresh lemon juice
- 1 tsp vanilla extract

👩🍳 Instructions
- Preheat oven to 350°F (175°C). Line or grease a 9×5 loaf pan.
- In a bowl, whisk together all dry ingredients.
- In another bowl, mix yogurt, eggs, honey, oil, lemon zest, lemon juice, and vanilla until smooth.
- Slowly combine wet and dry ingredients (don’t overmix).
- Toss blueberries in 1 tbsp flour (prevents sinking), then gently fold into batter.
- Pour into loaf pan and smooth top.
- Bake 40–50 minutes, or until a toothpick comes out clean.
- Cool 15 minutes in pan, then transfer to rack.

- ¼ cup vanilla protein powder
- 1–2 tbsp lemon juice
- 1–2 tbsp Greek yogurt
