Healthy taco pie

Ingredients:
- 1 lb lean ground turkey or chicken
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade seasoning mix)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (8 oz) corn, drained
- 6 whole wheat tortillas (6-inch)
- 1 cup reduced-fat shredded cheddar cheese
- Optional toppings: sliced olives, chopped green onions, salsa, fat-free Greek yogurt, cilantro
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Cook the Meat:
- In a large skillet, cook the ground turkey or chicken over medium heat until browned. Drain any excess fat.
- Add Vegetables and Seasoning:
- Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender, about 5 minutes.
- Stir in the taco seasoning, diced tomatoes, black beans, and corn. Let it simmer for another 5 minutes.
- Assemble the Pie:
- Spray a 9-inch pie dish with cooking spray. Layer 3 tortillas at the bottom of the dish, overlapping slightly. Spread half of the meat mixture over the tortillas, then sprinkle with 1/2 cup of the cheese.
- Repeat with the remaining tortillas, meat mixture, and cheese.
- Bake the Pie:
- Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve:
- Let it cool for a few minutes before slicing. Top with your favorite optional toppings like olives, green onions, salsa, Greek yogurt, or cilantro.
