Healthy Oatmeal Carrot and Apple Cake Recipe
Ingredients (Serves 6-8)
Dry Ingredients:
- 1 cup (130 g) oats, ground into oat flour
- 1 teaspoon baking powder
- ½ teaspoon cinnamon (optional, for extra flavor)
Wet Ingredients:
- 2 large eggs
- 1 cup (250 ml) natural yogurt
- 2 tablespoons (50 g) honey or syrup
- 2 medium carrots (300 g), grated
- 2 apples (320 g), grated
Toppings:
- Handful of walnuts, chopped, for garnish
Step-by-Step Instructions
Step 1: Prepare the Ingredients
- Grind the oats in a blender or food processor until you get a fine oat flour consistency.
- Grate the carrots and apples using a fine grater.
Step 2: Mix the Wet Ingredients
- In a large bowl, whisk the eggs until slightly frothy.
- Add the yogurt and honey (or syrup), and mix well.
- Stir in the grated carrots and apples, ensuring they are evenly combined.
Step 3: Combine the Dry Ingredients
- Add the ground oats, baking powder, and cinnamon (if using) to the wet ingredients.
- Stir until a thick, well-incorporated batter forms.
Step 4: Bake the Cake
- Preheat your oven to 180°C (350°F) and grease a baking pan or line it with parchment paper.
- Pour the batter into the pan and spread it evenly.
- Sprinkle the chopped walnuts on top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Step 5: Cool and Serve
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack.
- Slice and serve warm or at room temperature.
