Grilled Chicken Mediterranean Salad
A fresh, flavorful, and protein-packed salad for any meal!
Ingredients:
For the Salad:
2 cups mixed salad greens (lettuce, arugula, spinach)
1 grilled chicken breast, shredded
½ cup cherry tomatoes, halved
¼ cup cucumber, sliced
¼ cup red bell pepper, sliced
¼ cup shredded carrots
¼ cup beetroot, julienned
¼ cup feta cheese, cubed
¼ cup Kalamata olives
For the Dressing:
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 clove garlic, minced
Salt & black pepper to taste
Step by Step:
Grill the Chicken:
Season the chicken breast with salt, pepper, and a drizzle of olive oil.
Grill on medium heat for about 6-7 minutes per side or until fully cooked.
Let it rest, then shred into bite-sized pieces.
Prepare the Vegetables:
Wash and chop the salad greens.
Slice the cherry tomatoes, cucumber, bell pepper, and beetroot.
Julienne the carrots.
Assemble the Salad:
In a large bowl or serving plate, arrange the mixed greens.
Add shredded chicken, tomatoes, cucumber, bell pepper, carrots, and beetroot.
Top with feta cheese cubes and Kalamata olives.
Make the Dressing:
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and black pepper.
Serve & Enjoy:
Drizzle the dressing over the salad, toss lightly, and enjoy fresh!
