Spiced Chicken and Potato Salad Bowl
Ingredients: 
2 boneless chicken breasts
3 medium potatoes, cubed
4 cups mixed greens (lettuce, spinach)
1 cup cherry tomatoes, halved
1 cucumber, diced
1 apple, sliced
1/4 cup Greek yogurt dressing
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
Salt and pepper to taste
Instructions: 
Preheat your oven to 400Β°F (200Β°C). Toss the cubed potatoes with 1 tbsp olive oil, salt, pepper, and paprika. Roast for 25-30 minutes until golden and crispy.
Season the chicken with garlic powder, salt, pepper, and remaining olive oil. Grill on medium heat for 6-8 minutes per side, then slice into chunks.
In a bowl, arrange the mixed greens, cherry tomatoes, cucumber, and apple slices. Add the roasted potatoes and grilled chicken on top.
Drizzle with Greek yogurt dressing for a creamy finish. Toss lightly if desired.
