- 2 tbsp brown sugar or a sugar-free brown sugar substitute
- 1 tbsp Dijon mustard or whole-grain mustard
- 1 tbsp low-sodium soy sauce or coconut aminos
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Fresh chopped parsley (optional, for garnish)
- High-protein dipping sauce (e.g., a blend of Greek yogurt, a little mayo, sriracha, and spices)
Instructions
1. Prep and Preheat
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Slice and Arrange
- Slice your sausage links into even, bite-sized rounds.
- Arrange the sausage pieces in a single layer on the prepared baking sheet.
3. Make the Glaze
- In a small mixing bowl, whisk together the maple syrup, brown sugar substitute, Dijon mustard, soy sauce, garlic powder, and smoked paprika until well combined.
4. Coat and Bake
- Brush or pour the glaze evenly over the sausage bites, tossing them gently so every piece is well coated.
- Bake in the preheated oven for 20 to 25 minutes, stirring halfway through, until the edges are caramelized, sticky, and slightly crispy.
5. Serve
- Remove from the oven, garnish with a sprinkle of fresh chopped parsley, and serve warm with your favorite high-protein dipping sauce in the center!
