Garlic Parmesan Crusted Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs (use whole wheat for a healthier version)
  • 1 tbsp garlic powder
  • 1 tbsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or cooking spray
  • 1 egg, beaten
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). If you have a baking sheet, line it with parchment paper or spray it lightly with cooking spray.
  2. Prepare the Crust: In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat the Chicken: Dip each chicken breast into the beaten egg, making sure it’s fully coated. Then dredge it in the breadcrumb mixture, pressing lightly to make sure the crust sticks.
  4. Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, place the chicken breasts in the skillet and cook for about 2-3 minutes per side, until golden brown.
  5. Bake: Transfer the browned chicken breasts to the prepared baking sheet and bake in the oven for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Serve: Garnish with fresh parsley (optional) and serve. This goes great with a side of roasted vegetables or a salad!
