Garlic Parmesan Crusted Chicken

Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs (use whole wheat for a healthier version)
- 1 tbsp garlic powder
- 1 tbsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil or cooking spray
- 1 egg, beaten
- 2 tbsp fresh parsley, chopped (optional for garnish)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). If you have a baking sheet, line it with parchment paper or spray it lightly with cooking spray.
- Prepare the Crust: In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- Coat the Chicken: Dip each chicken breast into the beaten egg, making sure it’s fully coated. Then dredge it in the breadcrumb mixture, pressing lightly to make sure the crust sticks.
- Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, place the chicken breasts in the skillet and cook for about 2-3 minutes per side, until golden brown.
- Bake: Transfer the browned chicken breasts to the prepared baking sheet and bake in the oven for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Serve: Garnish with fresh parsley (optional) and serve. This goes great with a side of roasted vegetables or a salad!
