Ingredients — 4 servings

  • 4 catfish fillets, about 3–4 oz each
  • ½ cup fine cornmeal
  • ¼ cup almond flour
  • 1 egg
  • 2 tablespoons unsweetened milk or water

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper, optional

  • 1–2 tablespoons olive or avocado oil for pan-frying
  • Lemon wedges

Directions

  1. Pat the catfish dry.
  2. Beat the egg with the milk or water.
  3. Mix cornmeal, almond flour, paprika, garlic powder, onion powder, pepper, cayenne, and salt.
  4. Dip each fillet in the egg mixture, then lightly coat with the breading.
  5. Heat a skillet over medium heat and add the oil.
  6. Cook catfish about 4–5 minutes per side, depending on thickness, until golden and cooked through.
  7. Drain briefly on a rack or paper towel.
  8. Serve with fresh lemon.
