Ingredients:
4 eggs
2 tablespoons of grated cheese (optional)
salt and pepper
1 tablespoon of oil or butter
Vegetables:
1⁄2 cabbage (white or Beijing)
1 carrot
1⁄2 cucumber
1⁄4 red onion
a handful of arugula or breadcrumbs
Sos:
2-3 tablespoons of natural yogurt
1 tablespoon mayonnaise (optional)
1 teaspoon lemon juice
salt and pepper
The preparation:
Beat well seasoned eggs (and cheese if you use them). Fry a thin sheet of tortillas in a pan.
Cut the vegetables and prepare a fresh mix.
Mix the sauce ingredients in a bowl.
Arrange the vegetables on an egg base, pour the sauce and put in a wrap.
