Ingredients:

  • 1 lb ground pork (or ground chicken/turkey)
  • 2 cups shredded cabbage (green or a mix of green and red)
  • 1 cup shredded carrots (optional, as carrots have more carbs)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
  • 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil (for cooking)
  • 1/4 cup green onions, sliced
  • 1 teaspoon sesame seeds (optional, for garnish)
  • Salt and pepper, to taste

Instructions:

  1. Cook the Pork:
    • Heat the olive oil in a large skillet or wok over medium-high heat.
    • Add the ground pork and cook, breaking it up with a spatula, until fully cooked and browned. Drain any excess fat if necessary.
  2. Add Aromatics:
    • Push the pork to one side of the skillet and add the minced garlic and ginger to the empty side. Cook for about 1 minute, until fragrant.
  3. Add Vegetables:
    • Add the shredded cabbage (and carrots, if using) to the skillet. Stir to combine with the pork and cook until the cabbage is tender, about 5-7 minutes.
  4. Season:
    • Stir in the soy sauce (or coconut aminos), rice vinegar, and sesame oil. Mix everything well and cook for an additional 2 minutes.
  5. Finish Up:
    • Season with salt and pepper to taste.
    • Garnish with sliced green onions and sesame seeds if desired.
  6. Serve:
    • Serve hot, either on its own or with a side of cauliflower rice for a complete meal.
