Ingredients:
- 1 lb ground pork (or ground chicken/turkey)
- 2 cups shredded cabbage (green or a mix of green and red)
- 1 cup shredded carrots (optional, as carrots have more carbs)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced (or 1 teaspoon ground ginger)
- 2 tablespoons soy sauce (or coconut aminos for a soy-free option)
- 1 tablespoon rice vinegar (or apple cider vinegar)
- 1 tablespoon sesame oil
- 1 tablespoon olive oil (for cooking)
- 1/4 cup green onions, sliced
- 1 teaspoon sesame seeds (optional, for garnish)
- Salt and pepper, to taste

Instructions:
- Cook the Pork:
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the ground pork and cook, breaking it up with a spatula, until fully cooked and browned. Drain any excess fat if necessary.
- Add Aromatics:
- Push the pork to one side of the skillet and add the minced garlic and ginger to the empty side. Cook for about 1 minute, until fragrant.
- Add Vegetables:
- Add the shredded cabbage (and carrots, if using) to the skillet. Stir to combine with the pork and cook until the cabbage is tender, about 5-7 minutes.
- Season:
- Stir in the soy sauce (or coconut aminos), rice vinegar, and sesame oil. Mix everything well and cook for an additional 2 minutes.
