Easy Hamburger Potato Casserole

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 small onion, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1/2 cup sour cream (optional for extra creaminess)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess grease and add chopped onions. Cook for another 2 minutes. Season with garlic powder, onion powder, salt, and pepper.
  3. Prepare the sauce: In a bowl, mix cream of mushroom soup, milk, and sour cream (if using).
  4. Layer the casserole: Place half of the sliced potatoes in the baking dish, followed by half of the cooked beef mixture. Pour half of the soup mixture on top. Repeat with the remaining potatoes, beef, and soup mixture.
  5. Bake covered with aluminum foil for 45 minutes.
  6. Add cheese: Remove foil, sprinkle shredded cheese on top, and bake uncovered for another 15 minutes until golden and bubbly.
  7. Let it rest for 5 minutes before serving.

Optional Additions

  • Add frozen peas or corn for extra veggies.
  • Substitute cream of mushroom soup with cream of chicken or cheddar soup.
  • Use Monterey Jack or a cheese blend for variation.
