Chicken and Potato Bake

Ingredients:
- 2 large chicken breasts (or 4 boneless, skinless thighs), cut into bite-sized pieces
- 3 large potatoes, diced into cubes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1/2 cup heavy cream (or milk for a lighter version)
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano (or Italian seasoning)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan (optional)
- Chopped fresh parsley for garnish

Instructions:
- Preheat Oven: Set your oven to 375°F (190°C). Grease a baking dish.
- Prepare Potatoes: Toss diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Spread them evenly in the baking dish.
- Layer Chicken: Season chicken pieces with salt, pepper, and oregano. Spread them over the potatoes.
- Add Liquids: Pour chicken broth and heavy cream over the dish for a creamy texture.
- Top with Cheese: Sprinkle shredded cheese (and Parmesan, if using) over everything.
- Bake: Cover with foil and bake for 30 minutes. Remove foil, then bake for another 15-20 minutes until the potatoes are tender and the cheese is golden.
- Garnish and Serve: Sprinkle with fresh parsley and enjoy!
