Double Chocolate Protein Bars

Ingredients

Chocolate Protein Bars

  • 1/2 c almond butter
  • 1/4 c maple syrup
  • 1/2 c oat flour
  • 1/2 c chocolate protein powder
  • 2 tbsp cocoa powder (optional)*

Chocolate Coating

  • 2 c dark chocolate chips**

Instructions

Chocolate Protein Bars

  1. Line a loaf pan with parchment paper. Set aside.
  2. Mix the almond butter, maple syrup, oat flour, protein powder, and cocoa powder together in a large bowl. The dough will be thick and slightly crumbly! That’s ok.
  3. Press the dough into the bottom of the loaf pan. I like thicker protein bars so I only filled about 3/4ths of the pan.
  4. Place in the refrigerator and chill for one hour.
  5. Slice into six squares.

Chocolate Coating

  1. In a medium bowl, melt the chocolate chips in the microwave at 15s intervals, pausing to stir each time.

Notes

* I like to use Dutch processed black cocoa because it’s extra-dark compared to regular cocoa powder.

** You can use sugar free chocolate chips if you’d like to cut down on the sugar content.
