Double batch of the Skinny Monkey Cookies
Ingredients:
2 ripe bananas
1 cup quick oats
1/4 cup peanut butter
1/4 cup unsweetened cocoa powder
1/3 cup unsweetened applesauce
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, mash the bananas until they are smooth.
Add in the oats, peanut butter, cocoa powder, applesauce, and vanilla extract. Mix well until everything is fully combined.
Let the mixture rest for about 5 minutes to thicken up.
Using a cookie scoop or spoon, drop the mixture onto the prepared baking sheet. Leave about an inch of space between each cookie.
Bake for 12-15 minutes, or until the edges are slightly crisp.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
