Crock Pot Chicken and Dumplings

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into small pieces
  • 2 cups chicken broth
  • 2 cups water
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 cup frozen peas (optional)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (16.3 oz) refrigerated biscuits (8 biscuits)

Instructions:

  1. In the crock pot, combine chicken pieces, chicken broth, water, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper.
  2. Cover and cook on low heat for 6-7 hours or high heat for 3-4 hours, until chicken is cooked through and vegetables are tender.
  3. About 30 minutes before serving, shred the chicken using two forks.
  4. Stir in the cream of chicken soup and frozen peas (if using). Mix well.
  5. Cut each biscuit into quarters and place on top of the chicken mixture in the crock pot.
  6. Cover and cook on high heat for 30-45 minutes, until biscuits are cooked through (they will puff up and become dumplings).
  7. Gently stir the dumplings into the chicken mixture. Serve hot and enjoy your comforting crock pot chicken and dumplings!
