Ingredients
- 4 cups finely shredded cabbage
- 1 large carrot, grated
- 1 cup shredded cheddar cheese
- 2 large eggs
- ½ cup all-purpose flour
- 2 green onions, finely sliced
- 2 cloves garlic, minced
- ½ teaspoon paprika
- ½ teaspoon onion powder
- Salt and black pepper, to taste
- 2–3 tablespoons vegetable or olive oil, for frying

Instructions
- Prepare the vegetables: Place the shredded cabbage and carrot in a bowl. Sprinkle lightly with salt and let sit for 5 minutes. Squeeze out as much excess moisture as possible.
- Make the mixture: Add the cabbage and carrot to a large bowl with cheese, eggs, flour, green onions, garlic, paprika, onion powder, and black pepper. Mix until evenly combined.
- Form the fritters: Scoop about ¼ cup of the mixture at a time and flatten slightly into small patties.
- Pan-fry: Heat oil in a large skillet over medium heat. Cook the fritters in batches for about 3–4 minutes per side, until crisp and deeply golden brown.
- Drain: Transfer to a paper towel-lined plate to remove excess oil.
- Serve: Serve hot with sour cream, ranch dressing, garlic yogurt sauce, or your favorite dipping sauce.

- Removing excess moisture from the cabbage and carrot is the key to crispy fritters.
- Don’t overcrowd the skillet; cook in batches for better browning.
