🥬 Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh spinach (chopped)
  • 2 tbsp cream cheese (use light if preferred)
  • 2 tbsp shredded mozzarella or cheddar
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • Salt & black pepper (to taste)
  • ½ tsp paprika or Italian seasoning
  • Optional: a tablespoon of Greek yogurt (for extra creaminess with less fat)

🍳 Instructions

  1. Prepare the chicken
    Slice each breast horizontally to create a pocket (don’t cut all the way through).
  2. Make the filling
    Sauté garlic in olive oil, add spinach, and cook until wilted.
    Mix with cream cheese, shredded cheese, and Greek yogurt (if using).
  3. Stuff the chicken
    Fill each breast with the spinach mixture and secure with toothpicks if needed.
  4. Season & sear
    Rub with salt, pepper, and paprika. Sear in a pan for 2–3 minutes per side.
  5. Bake
    Transfer to oven at 180°C (350°F) for 20–25 minutes until fully cooked.
