Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup old-fashioned oats
- 1 cup sliced almonds
- 1/2 cup sweetened shredded coconut
- 1 ½ cup white chocolate chips
Preparation
- In a mixing bowl or the bowl of a stand mixer, beat the butter and both sugars together with an electric mixer until light and fluffy, about 3 minutes.
- Add eggs and vanilla and beat until well combined.
- Add flour, salt, baking powder, and baking soda, and mix until just combined.
- Stir in oats, almonds, and coconut. Add white chocolate chips and stir to incorporate.
- Chill dough at least 1 hour or up to 24.
- When ready to bake, preheat oven to 350°F and line a baking sheet with parchment paper.
- Scoop out in 1/4 cup portions onto prepared baking sheets, leaving 2 inches between each scoop.
- Bake until golden around the edges,13-15 minutes. Let cool 5 minutes on baking sheet before removing.
