Comforting Chicken & Noodles Crock Pot

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups frozen mixed vegetables (optional)
  • 4 cups egg noodles (uncooked)

Instructions:

  1. Prep the chicken: Place the chicken breasts in the bottom of your Crock Pot.
  2. Add the seasonings and veggies: Sprinkle the onion, garlic, thyme, parsley, salt, and pepper over the chicken. Add the frozen mixed vegetables (if using).
  3. Add the liquids: Pour in the chicken broth and cream of chicken soup. Stir a bit to combine everything.
  4. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be cooked through and tender.
  5. Shred the chicken: Once the chicken is fully cooked, shred it with two forks directly in the Crock Pot.
  6. Add the noodles: Stir in the egg noodles, cover, and cook on high for another 30-40 minutes, or until the noodles are tender.
  7. Serve and enjoy! Give everything a good stir before serving, and enjoy this creamy, comforting meal!
