Cinnamon Sugar French Toast Muffins

Ingredients

For the Muffins:

  • 8 slices of bread, cubed (preferably slightly stale)
  • 3 large eggs
  • 1 cup milk
  • 1/4 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt

For the Cinnamon Sugar Topping:

  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. Prepare the bread: Cut the bread into small cubes and set aside.
  3. Mix the custard: In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Combine bread and custard: Add the bread cubes to the custard mixture, stirring gently to ensure all the bread is coated. Let it sit for about 10 minutes so the bread can soak up the custard.
  5. Fill the muffin tin: Divide the soaked bread mixture evenly among the prepared muffin tin cups, pressing down slightly to pack them in.
  6. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and set in the center.
  7. Make the cinnamon sugar topping: While the muffins are baking, mix together the sugar and cinnamon in a small bowl. Once the muffins are done baking, brush the tops with melted butter, then dip each muffin into the cinnamon sugar mixture to coat.
  8. Serve: Allow the muffins to cool slightly before serving. Enjoy them warm with a drizzle of maple syrup if desired!
