Spinach Stuffed Pastry

Ingredients:

  • 1 sheet of puff pastry, thawed
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1/2 cup ricotta cheese
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • A pinch of nutmeg (optional)
  • 1 tbsp olive oil

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the Filling:
    • Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic, sautéing until softened.
    • Add the spinach to the pan and cook until wilted if using fresh spinach, or heated through if using frozen. Season with salt, pepper, and a pinch of nutmeg.
    • Remove the mixture from heat and let it cool slightly.
    • In a bowl, mix the cooked spinach, ricotta cheese, feta cheese, and Parmesan cheese until well combined.
  3. Prepare the Pastry:
    • Roll out the puff pastry sheet on a lightly floured surface. Cut the sheet into squares or rectangles, depending on the size of pastries you want.
    • Spoon a small amount of the spinach mixture onto the center of each pastry square.
  4. Shape the Pastry:
    • Fold the pastry over the filling to form triangles, rectangles, or squares. Press the edges together with a fork to seal.
  5. Egg Wash:
    • Brush the tops of the pastries with the beaten egg for a golden finish.
  6. Bake:
    • Place the stuffed pastries on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
  7. Serve:
    • Let the pastries cool slightly before serving. Enjoy them warm or at room temperature!
