Diabetic-Friendly Vanilla Loaf Cake

π Ingredients (1 small loaf)
- 1Β½ cups almond flour
(or 1 cup whole-wheat flour if almond flour isnβt available) - 3 large eggs
- Β½ cup unsweetened Greek yogurt
- β cup erythritol or monk-fruit sweetener (powdered)
- ΒΌ cup olive oil or melted butter
- 1 tsp vanilla essence
- 1Β½ tsp baking powder
- ΒΌ tsp salt
- (Optional) Zest of Β½ lemon or orange

- Preheat oven to 170Β°C (340Β°F).
- Line a loaf pan with parchment paper.
- In a bowl, whisk eggs and sweetener until light.
- Add yogurt, oil/butter, and vanilla. Mix well.
- In another bowl, mix flour, baking powder, and salt.
- Slowly fold dry ingredients into wet mixture.
- Pour batter into loaf pan.
- Bake for 35β40 minutes, until a toothpick comes out clean.
- Cool completely before slicing.
