Diabetic-Friendly Chicken & Zucchini (Lemon Garlic)

🧾 Ingredients (2 servings)

  • 2 boneless chicken breasts (or thighs)
  • 2 medium zucchini (sliced or cut into sticks)
  • 2 tbsp olive oil
  • 3–4 garlic cloves (minced)
  • Juice of 1 lemon
  • ½ tsp black pepper
  • ½ tsp paprika
  • Salt to taste
  • Fresh parsley or coriander (optional)

👩‍🍳 Instructions

1. Season the chicken

  • Rub with salt, pepper, and paprika.

2. Cook chicken

  • Heat 1 tbsp oil in a pan.
  • Cook chicken on medium heat for 5–6 minutes per side until golden and cooked through.
  • Remove and set aside.

3. Cook zucchini

  • In the same pan, add remaining oil and sauté zucchini for 3–4 minutes (keep slightly crisp).

4. Make lemon garlic sauce

  • Add garlic to the pan, cook briefly (don’t burn).
  • Add lemon juice and a splash of water.
  • Stir and let it simmer lightly.

5. Combine

  • Return chicken to the pan and coat with sauce.
  • Cook 2 more minutes.
