Chicken and Potato Bake

Ingredients:

  • 2 large chicken breasts (or 4 boneless, skinless thighs), cut into bite-sized pieces
  • 3 large potatoes, diced into cubes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup heavy cream (or milk for a lighter version)
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano (or Italian seasoning)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan (optional)
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat Oven: Set your oven to 375°F (190°C). Grease a baking dish.
  2. Prepare Potatoes: Toss diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Spread them evenly in the baking dish.
  3. Layer Chicken: Season chicken pieces with salt, pepper, and oregano. Spread them over the potatoes.
  4. Add Liquids: Pour chicken broth and heavy cream over the dish for a creamy texture.
  5. Top with Cheese: Sprinkle shredded cheese (and Parmesan, if using) over everything.
  6. Bake: Cover with foil and bake for 30 minutes. Remove foil, then bake for another 15-20 minutes until the potatoes are tender and the cheese is golden.
  7. Garnish and Serve: Sprinkle with fresh parsley and enjoy!
