Ingredients
- 3 large zucchini
- 2 cups marinara sauce
- 1½ cups ricotta cheese
- 1½ cups mozzarella, shredded
- ½ cup Parmesan
- 1 egg
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- Fresh basil
- 1 tbsp olive oil
🔥 Directions
- Heat oven to 400°F (200°C).
- Slice zucchini lengthwise into very thin strips. Brush with olive oil and roast 6–8 minutes until flexible. Pat dry.
- Make filling: Mix ricotta, egg, Parmesan, garlic, Italian seasoning, salt and pepper.
- Build: Spread 1–2 tbsp marinara in a skillet or baking dish. Place filling on each zucchini strip and roll tightly.
- Arrange rolls seam-side down. Spoon marinara over the top and cover generously with mozzarella.
- Bake covered for 20 minutes, then uncover and bake 10–15 minutes until bubbling and golden.
- Broil 1–2 minutes for beautifully browned cheese. Finish with fresh basil.

For the rich, restaurant-style result in your photo: don’t skip roasting and drying the zucchini. It removes excess water and makes the cheese and tomato sauce much more flavorful.
