Ingredients

3 medium potatoes, thinly sliced

6 large eggs

1 cup diced lean ham (reduced-fat or turkey ham preferred)

½ cup reduced-fat shredded cheese

1 small onion, diced

Salt & black pepper

½ tsp paprika or Italian seasoning

Cooking spray

Instructions

Preheat oven to 190°C / 375°F.

Lightly spray a baking dish with cooking spray.

Layer half the potatoes and onions in the dish.

Add half the ham and a sprinkle of cheese.

Repeat layers.

In a bowl, whisk eggs with salt, pepper, and seasoning.

Pour egg mixture evenly over the casserole.

Bake for 35–40 minutes until eggs are set and potatoes are tender.

Let rest 5–10 minutes before slicing.
