1 mug strong tea (hot, no milk)
(English breakfast or black tea works best)
1 mug self-raising flour
1 mug raisins
1 egg
π Use the same mug for everything (about 250 ml).
πͺ Preparation
Soak the raisins
Pour the hot tea over the raisins
Leave to soak for 30β60 minutes
(This plumps them up and adds flavour)
Preheat air fryer
160Β°C / 320Β°F for 5 minutes
Make the batter
Add the egg to the soaked raisins and tea
Mix well
Add the self-raising flour
Stir until just combined (donβt overmix)
Prepare the tin
Grease a small loaf tin or cake tin that fits your air fryer
Line with baking paper if you like
Pour in batter
Smooth the top gently

Cook
Place tin in the air fryer basket
Cook at 160Β°C / 320Β°F for 40β50 minutes
Check
Insert a skewer or knife into the centre
It should come out clean
If browning too fast
Loosely cover the top with foil and continue cooking

Let cool in the tin for 10 minutes
Turn out and cool completely before slicing
