Air Fryer Roasted Potatoes and Bacon

ngredients:
- 4 medium-sized potatoes, washed and diced into 1-inch cubes
- 6 slices of bacon, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional: chopped fresh parsley for garnish
Instructions:
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- In a large bowl, toss the diced potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Place the seasoned potatoes in the air fryer basket in a single layer, making sure they are not overcrowded. If needed, cook in batches.
- Cook the potatoes in the air fryer for 15 minutes, shaking the basket halfway through to ensure even cooking.
- While the potatoes are cooking, place the chopped bacon in a microwave-safe dish and microwave for 2-3 minutes until slightly crispy.
- After 15 minutes, add the cooked bacon to the air fryer basket with the potatoes and toss to combine.
- Continue cooking for another 5-7 minutes or until the potatoes are crispy and golden brown, and the bacon is fully cooked.
- Once done, remove the potatoes and bacon from the air fryer and transfer to a serving dish. Garnish with chopped fresh parsley if desired.
