Ingredients:

  • 1 lb ground beef (80/20 or 85/15 for more flavor)
  • 1/2 cup almond flour (as a substitute for breadcrumbs)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup unsweetened ketchup (or use a sugar-free version)
  • 1 large egg
  • 1/2 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp Worcestershire sauce (optional for flavor)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil (for brushing the top)

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 5 minutes.
  2. Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, almond flour, grated Parmesan, egg, chopped onion, minced garlic, Worcestershire sauce (if using), oregano, thyme, salt, and pepper. Mix everything together until fully incorporated.
  3. Shape the Meatloaf: Transfer the meat mixture to a piece of parchment paper or directly into the air fryer basket. Form the mixture into a loaf shape that fits comfortably in your air fryer. You can either shape it into a traditional loaf or a slightly flattened rectangle for faster cooking.
  4. Brush with Olive Oil: Lightly brush the top of the meatloaf with olive oil to help it brown nicely.
  5. Cook in the Air Fryer: Place the meatloaf in the air fryer basket and cook at 350°F (175°C) for 25-30 minutes, or until the internal temperature reaches 160°F (71°C) when tested with a meat thermometer.
